Elegant, classic sparkling wine made using the Champagne method. Vouvray is lesser known in Britain but is famous in France for producing great quality still and sparkling wines based on the Chenin Blanc grape. Chenin brings a naturally high acidity and flavours of lemon, apple, and stewed pears. The second fermentation takes place in a bottle and the wine spends a whole 18 months aging on its lees (yeast), lending boulangerie-esque aromas of biscuit, brioche, and pastries. The result is a wine with a distinctly Gallic Tarte Tatin vibe, balancing soft fizz, concentrated fruitiness, and fresh acidity.
