Champagne and sparkling wine are wines with the carbonation trapped within the wine itself. Champagne is produced in the Champagne region of France and is made through what is known as the traditional method. In this method, a low alcohol still wine is bottled with additional yeast and sugar. The yeast and sugar start a second fermentation and the carbonation made during the fermentation process gets trapped within the liquid, creating bubbles. Sparkling wine can be produced in many other regions around the world and usually goes through what is called tank fermntation. Both drinks have a distinct flavor, with Champagne tending to be more complex and bready while sparkling wine may have more fruity and floral notes. Both drinks can be enjoyed as aperitifs, with meals, or as a dessert wine. While Champagne tends to be more expensive than other sparkling wines, both drinks are perfect for a special occasion or to add a bit of sparkle to a meal.
