The Dawn Chorus is classically white gold colored with a greenish hue to the rim when poured into the glass. It has very clean, focused aromas of white grapefruit, passion fruit, lemon, lime, citrus and a saline mineral note. The palate is light, refreshing and very well balanced with savory citrusy fruits and a dry, crisp finish. You’ll find it much less overt than a Marlborough Sauvignon Blanc and more in balance making this a fun wine to enjoy by itself as an aperitif or pair it up with oysters, shellfish, white lemon pizza or green salad.
